Sift and fold in 1 1/2 cups of self-raising flour, 1 teaspoon of bicarb soda and 2 teaspoons of cinnamon
Add 250 grams of grated carrots and 3/4 cup of chopped walnuts.
Bake in 20cm round baking tin at 180 C for 1 hour.
[This is my favourite part:] Combine 250g of cream cheese with several tablespoons of honey (to taste) for cake icing.
